Just replace the 3 tbsp of oil with 2 tbsp of vanilla soy yogurt. YUMMY! When cooled, these were reminiscent of donuts. I also add 1/4 tsp cinnamon. Oh, and if you omit the oil then you will need to have a very good nonstick pan (silicone work best I think?) or you will have to briefly spray your muffin tin/muffin cups with nonstick spray. Otherwise half your muffin ends up stuck in the container. <br /><br />Another fave are the Pecan Date Nibblers. HOLY COW! How can a person plan a rotation of food while trying new menu items and minimizing financial loss due to rotted produce? How often do you shop and at how many different locations?
